    Vegetarian Nigerian: fluffy vanilla vegetarian pancakes

    Happy pancake festival. If you are pursuing simple pancake recipes, it is lightweight, fluffy and complete work, then you have nothing to do. If you find yourself in the “I-FORGOT-TODAY-IS-PANCAKAKE-DAY” camp, you may already have all the ingredients at home, which makes it perfect.

    These thin pancakes are soft pillows, which is due to the vegan and milk, and combined with self -breed flour.     • 2 cups of sugar soy milk

    • 1 tablespoon of lemon juice or apple vinegar

    • 1 tablespoon vanilla extract

    • 1 tablespoon of sunflower oil (plus extra fried)

    • 2 cups of self -raising flour

    • pinch salt

    🥞 Method:

    1. Mix soy milk and lemon juice (or apple cider vinegar) in a large stirring bowl, rest for 5 minutes.

    2. Stir in vanilla, sunflower seed oil and sugar.

    3. Add flour and salt. Gently mix until it is fully mixed; if there are some small pieces, it doesn’t matter.

    4. Heat a small amount of oil in the frying pan with medium heat. Boil the pancake batter SC until the edge or around the top to form a bubble. Flip and cook on the other side for 2-3 minutes.
