• 2 cups of sugar soy milk
• 1 tablespoon of lemon juice or apple vinegar
• 1 tablespoon vanilla extract
• 1 tablespoon of sunflower oil (plus extra fried)

• 2 cups of self -raising flour

🥞 Method:
1. Mix soy milk and lemon juice (or apple cider vinegar) in a large stirring bowl, rest for 5 minutes.
2. Stir in vanilla, sunflower seed oil and sugar.
3. Add flour and salt. Gently mix until it is fully mixed; if there are some small pieces, it doesn’t matter.
4. Heat a small amount of oil in the frying pan with medium heat. Boil the pancake batter SC until the edge or around the top to form a bubble. Flip and cook on the other side for 2-3 minutes.
