    Nigerian classic crisp, savory twist

    About Akara, fluffy soy fried dough sticks, crispy on the outside and soft and delicious on the inside. Whether it’s fried, frying or used as an akaraji, Akara has long been a staple in Nigerian house and street food culture.

    Even if deep-fried akara will always win, we all know that this is not always an option for a variety of reasons, including health reasons. So, what if we turn Akara into waffles? We don’t have all the oily smell. The end result is a delicious and crisp Akara that satisfies your cravings and takes your waistline into account.

    WaffleWaffle

    Element quantity
    Peeled black-eyed peas (or unweared brown beans) 2 cups (about 400 grams)
    onion ½ medium, chopped
    Fresh chili (such as ATA Rodo/Scotch hood) 1 small chopped (adjust seasoning)
    Salt taste
    Water (for soaking and mixing) Enough soak + smooth mixing
    Optional: Egg 2 large (for binding/extra softness)
    Optional: Fermentation powder ½ teaspoon (lighter waffles)
    Oil or non-stick spray For waffle iron

    direction

    1. First immerse the beans in water for 2-4 hours (this step helps soften the beans)
    2. Mix the beans with 1/4 cup water in the blender (only). Pull the mixture into a smooth thick paste
    3. Pour the jam into a bowl. Add salt, pepper, chopped onion, egg (if used) and salt. Mix with a blender or mixer for 5 minutes. This is to blend the air into the batter.
    4. Heat the waffle iron and brush with some oil.
    5. Scroll 1/3 cup batter into waffle iron. Cook until crispy (if you have automatic waffle iron, you may have to put the batter in at least 3 sets. The batter should be cooked for at least 4 minutes)
    6. Repeat step 4 until all batter is cooked
    7. Serve Akara Waffle alone or with bread, Garri, Ogi (Pap) or fried yam. enjoy! !
