The first time I made this cornbread recipe was when I visited Texas in 2022.
Honestly, they’re delicious on their own, served warm with a dab of vegan butter, or with any stew or soup of your choice. If you’re attending a potluck, they’re perfect for sharing with a crowd and make a great addition to any food spread.

(Serves 8)
1 cup cornmeal or corn grits
1 cup (plus 2 tablespoons) plain flour
1 teaspoon baking soda
1 teaspoon salt
2/3 cup caster sugar
1 and 1/4 cups vegan milk
1/3 cup sunflower oil
method
Preheat the oven to 200 degrees Celsius.
Place all ingredients in a mixing bowl and stir with a wooden spoon until a lump-free batter forms.
Bake in center of oven for 20-25 minutes, or until a toothpick poked into center comes out clean.
